Cooking your catch on a Lake Laberge beach!

Before you can cook 'em, you have to catch 'em -
in the Yukon, that's easy, though!


Beer Batter

Makes good onion rings.
  • 1 Beer or Sprite
  • 1 Egg
  • 6 Drops Tabasco Sauce
  • 4/5 lbs Pike filets - boneless
  • Flour
  • Oil
  • Dill, garlic, seasoned salt, lemon, pepper - to taste
Put all ingredients into bowl and add flour until thickens (drips off fish).
Dip fish in batter. Place in oil.

Test - The oil is ready when a drop of batter will sink then rise to the top.


Pike Fettucini

  • 1 green pepper, thinly sliced
  • 1 onion, thinly sliced
  • 6-9 mushrooms
  • 2 tbsp. garlic, crushed
  • 1/8 lb. butter
  • 1 tsp. basil - sweet
  • 1 tsp. lemon juice
  • 1 tsp. seasoned salt
  • 5-6 tbsp. flour
  • 3-4 cups milk
Cook all ingredients until most of the juice is gone.
Add Pike or Prawns.
Add flour to thicken.
Add milk slowly while stirring mixture and bring to a boil.
Turn down heat and let set to thicken.

Alternate: Add 1/4 cup white wine.

Taste. If bland add more seasoned salt and lemon juice.

Serve on a bed of fettuccine.


Tomato Pike Cordon Bleu

Place Pike filet in tinfoil, add 1/8 pound of butter.
Add onion, back bacon or ham, swiss or mozzarella or Monterey Jack cheese.
Add 1 tin stewed tomatoes.
Add seasoned salt, garlic.
Add another Pike filet.
Wrap and cook about 7.5 minutes on each side.


Basic Batter

(For frying and texture for bakes)

In a big bag, add and shake:

  • 1 handful flour
  • 5 handsful corn meal
  • 1/2 handful garlic powder, seasoned salt, dill weed, lemon pepper
  • pinch cayenne pepper


Spicy Thai Pike

  • 1 red pepper
  • 1 green pepper
  • 1 can mushrooms
  • 1 onion
  • butter
  • Tabasco sauce
  • 1 Sprite or 7-Up or Cola
  • 1 bottle of "Memories of Thailand" (available at Super Store)
Use basic batter for texture.

Place boneless Pike filet on tinfoil.
Add peppers, mushrooms, onion.
Cover with basic batter.
Pour on Memories of Thailand sauce, to taste.
Sprinkle with soda pop of choice.
Add a few cubes of butter.
Wrap and cook.

(Soda pop less spicy or Tabasco more spicy)


Other "Memories" sauce-flavours (can be purchased at Super Store) - good for Trout or Pike:

  • Memories of Thailand
  • Roasted Garlic
  • Spicy Plum
  • Memories of the Queen Charlottes (Salmon sauce)
  • Sweet and Sour
  • Jamaican Jerk (really spicy)

Use heavy duty tinfoil for bakes. Wrap 3 or 4 times if flipping/turning
